Thanksgiving Recipes

Hey All - so all month long I’m going to be sharing favorite family recipes and the stories behind them. Here’s the first installment - my Aunt Rita’s corn pudding.

Aunt Rita made this for my folks and I years ago when we went to the Outer Banks of NC for a vacation. She greeted us with a whole meal and I can still remember the first time I tasted this corn pudding, it was like heaven in my mouth.


Aunt Rita's Corn Pudding
2 Boxes Thawed Frozen Yellow Corn
(approx 4 cups)
1 Cup Milk
1/4 cup sugar (I only add about 1Tbsp, cause Catskills corn in sweet!)
3 Eggs, Beaten
3-4 Tbsp Melter Butter
salt and pepper to taste

Combine all ingredients in large bowl. Pour in to greased casserole and bake at 350 for approximately one hour. You'll notice it will no longer jiggle in the middle when it's done and the edges will be brown and crispy.
